Rum Glazed Salmon

salmonThis is one of the most incredible glazes I’ve had on salmon. I’ve also tried it on pork and chicken with great success.
I love to serve this fish with sauteed veggies (Zucchini, mushrooms, peppers, snow peas) and rice.

1 C brown sugar
1/4 C soy sauce
1/3 C Captain Morgain’s rum
2 Tablespoons lime juice
2 teaspoons grated ginger or 1/8 teas ginger powder
1/2 teas salt
1/2 teas pepper
2 crushed garlic cloves

Combine in a large zip lock bag. Add about 8 (6 oz 1″ thick) salmon fillets.

Marinade for at least 30 minutes, turning bag at least once. Remove meat from bag and discard.

Preheat oven to 350 degrees. Place fish in foil packet. Cook for about 20 minutes until fish easily flakes apart with fork. The marinade should sizzle and be a little caramelized on the tin foil for the most flavor.
